A delicious fruit dessert

This is an easy and quick dessert which my grandmother used to make with bananas, but you can make it with apples or figs or pineapples or straw berries or any other firm fresh fruit. You will need a large cup of chopped fruit, one fourth cup of desiccated fresh coconut, and one fourth cup of sugar. You can substitute sugar with honey or molasses. Now combine all this in a heavy bottomed pan on medium flame. Stir occasionally. The sugar will start melting and combined with the cooked fruit, will start giving a heavenly aroma…stir for five minutes on low flame and when the sugar starts caramelizing, remove from heat and mix in a table spoon of clarified butter. Stir well. The delicious fruit dessert is ready to eat. You can eat it as it is, have it with ice cream, or use it as stuffing to make a delicious pan cake…. The possibilities are end less.

5 Tips for Healthy Living

 

We have all had this underlining thought that maybe we should eat healthier for reasons from wanting more energy to fear of some disease.  Sometimes this idea seems so overwhelming and inconvenient.  Here are five simple ways to improve your nutrition and not make you crazy.  Remember it is progress not perfection!

1) Choose water at all times and treat juice and soft drink as a treat.  Often, we confuse thirst with hunger which causes overeating.

2) Stay away from empty calorie foods.  Empty calorie foods are those that make you think that you have eaten a food but leave you starving for nutrients.  Examples:  fast foods, white bread, candy, soft drinks, and pastries.

3) Choose nutrient dense foods.  Nutrient dense foods offer abundance of vitamins and minerals and fairly low calories.  Eating a diet high in nutrient dense foods prevents overeating.   Examples: fruits, vegetables, eggs, beans, seeds, nuts and whole grains. 

4) Follow the 80/20 Rule.  Remember progress not perfection so enjoy nutrient dense food 80% of the time and allow empty calorie foods 20% of the time.  This pattern allows you to not feel deprived nutritionally or mentally.

5) Plan your meals in advance.  Planning is the key to success in any endeavor and healthy eating is no exception.  Keep healthy snacks available to save you from trips to the vending machine and fast food restaurants.   Fruit is your secret weapon!  Fruit is the best quick snack and curbs the appetite while offering abundance of nutrients and water.

The Cara Cara Orange

 

The Cara Cara Orange is relatively new on the citrus scene, discovered in 1976 at the Hacienda Cara Cara in Venezuela.  From there it was brought to Florida, and then to California where it has adapted rather well.  At first glance, it's hard to distinguish from a normal California navel orange, but peel it open and a rich pink flesh is revealed!   It's flavor has been said to hint the tangy zing of grapefruit, cranberry, and even cherry flavors, along with the sweet citrus taste of a navel orange.  Cara Cara Oranges are typically available from December to March, so keep an eye out for these unique and delicious treats in your weekly baskets.   Can't tell the difference?  Ask your Hi5 Freshness Specialist to point one out.
